Sharpening knives - it's that easy
Even the very best knife will eventually become blunt. Depending on the quality, purpose and storage, this can take several years. Nevertheless, you will need to sharpen it at some point.

If you are not sure whether your knife is dull, you can use a very simple trick. Hold the edge of the knife directly under a light source. If you see a narrow strip of light, then the knife is dull, because a sharp edge has too little surface area to reflect the light.

Sharpening with the water stone
To sharpen your knife with the water stone, you need at least two different grits: One for pre-grinding (medium grit, about 800 -1200) and one for honing and sharpening (fine grit, 3000 - 8000). You only need a very coarse grit if the blade already has nicks or is extremely dull and the grinding process with a finer grit would take too long.

When grinding, an angle of about 15 ° is recommended for European blades. You then pull your blade from the top right to the bottom left over the stone and back. Make sure that the angle and pressure always remain the same.
