Kitchen Knives

Whether you cook every day, or every now and then; and whether it's your favorite hobby or a necessity - Good kitchen knives are essential; the whole process of cutting is much easier to use and good kitchen knives need to be sharpened less frequently. But what makes a good kitchen knife?

Features of a good chef's knife

If you want to buy a kitchen knife, there are three main things to consider: robustness, cutting properties, and maintenance sensitivity. And here comes the crux of the matter: there is no kitchen knife that offers perfect results in all three respects. Therefore, a good kitchen knife is always a compromise.

Why is that? The ultimate expectation of the knife is, by its very nature, the greatest possible sharpness. To achieve this, the cutting edge of the kitchen knife must be extremely thin. Such blades require hard, quality steel. Such steel however is more sensitive. A good chef's knife must be as sharp as possible and yet robust. And with careful care, a good knife lasts a lifetime.

Types of cooking knives

General purpose knife: A general purpose knife, also called a universal knife, is equipped with a slender blade, about 10 to 15 cm long. It is often used in the kitchen for peeling or for dicing for example smaller pieces of meat.

Bone knife: As the name suggests, the bone knife is used to remove the bones from the flesh. Tendons and skin can also be removed. So you need it if you buy meat in larger cuts, i.e. with bone and skin. The blade shape varies from knife to knife, but most of the time the blade is straight and slightly slims down to the tip. As a rule, the blade is between 13 and 16 cm long.

Bread knife: The most characteristic feature of a bread knife is the relatively long blade with serrated cutting edge. Also joint roasts and certain types of pastries can usually be cut better with the bread knife.

Fillet knife: The fillet knife, also called a filier knife, belongs in the equipment of every angler, but also in the home it makes a good addition. Primarily, you use it for filleting fish, but due to its rather flexible, slender blade and very sharp edge, it is also suitable for removing the outer flesh of pumpkins and oranges, or for removing the skin and tendons of meat.

Vegetable knife: Vegetables are healthy and should not be missing from any diet. To process them there are special vegetable knives. As a rule, it is relatively short with about 9 cm blade length, has a straight edge and a curved blade back. Most of them are universally used for different vegetables, but there are also knives that are especially suitable for certain vegetables and fruits. The peeling knife is similar, but has a curved edge.

Chef knife: The chef's knife is the most important utensil in a kitchen and forms part of the basic equipment. It has an average 20 cm long, pointed blade that tapers to both the cutting edge and the tip. Due to its functional requirements the chef's knife is extremely sharp and slides through the ingredients without exerting pressure.

Ham knife: The ham knife is used to cut meat and sausage into sometimes wafer-thin slices. As the name suggests, the knife excels at slicing smoked ham, such as Serrano. Characteristically, it has a long, slender blade, a sharp edge and a low blade height. The last point, by the way, is the reason why it is used universally by many chefs, as the less high blade makes more precise cuts.

Steak knives: Steak knives can be found in more and more households. Not without reason: they slide through the meat more easily without exerting pressure, so that the meat juice is not squeezed out during cutting. The steak knife has a slender, pointed blade with a smooth or slightly toothed edge.
